A place with a taste for all the senses: Weitblick Restaurant : Austrian Ecolabel and organic certified

One year after opening in October 2021, Das Weitblick - Lounge|Rooftop|Bistro is a showcase example of how Ecolabel and organic certification complement each other perfectly: after successfully passing the Austrian Ecolabel test for gastronomy in June, the restaurant, which is entirely dedicated to organic, regional and seasonal, has now also become an organic-certified Gold Partner of Bio-Austria.

Located on the fourth floor of the Bründl Sports flagship store in Kaprun, which was awarded the ÖGNI platinum and crystal certificate for sustainable interior design in May 2022, Das Weitblick follows a holistic and integrated sustainability concept. The framework for this concept is provided by the 17 UN SDGs, the fulfilment of which is also supported by the implementation of the comprehensive criteria of the Austrian Ecolabel. These demand resource-optimised, energy- and water-saving business management as well as support for environmentally friendly travel and, of course, an ecological and waste-avoiding purchasing policy in which the use of regional and organic food is also obligatory.

"Since all three pillars - ecology, economy, social issues - receive equal attention, we have not only focused on the food. The building and the ambience at Das Weitblick, waste management, energy efficiency, sustainable company clothing, and development places for our employees are also always in the focus of sustainable action," says Christoph Bründl, the managing director of Bründl Sports.

The dishes served at Das Weitblick are implemented with the lowest possible ecological footprint and an organic content of over 90%. "Among other things, organic stands for the highest quality, environmentally friendly, sustainable production of food, freedom from genetic engineering, no chemicals in fertilisation and pest control, species-appropriate animal husbandry and animal welfare, or strengthening local and regional economic cycles," says restaurant manager Christoph Wagner. Thomas Hollaus, head chef, adds: "Our partners and suppliers for food and beverages are organic farmers and farms from the Salzburger Land. We are proud to say that our ingredients come to us fresh and directly from the field. They are then handmade by us and freshly prepared for each order. You can taste this difference on your plate."

To also keep food waste as low as possible, Das Weitblick is a partner of the "Too Good To Go" platform. Surplus food that can no longer be used can be made available to interested consumers at a low price via this app.

The fact that external recognition from third parties and regular audits help the company to meet its high standards and contribute to further development is emphasised by Managing Director Christoph Bründl: "These awards are a confirmation and motivation on our path to sustainability. We have the courage to leave gaps and are constantly striving to identify and implement improvements. Audits by independent bodies for certifications and awards help us in this."
